How Does Kimbap Differ from Japanese Rolls (Sushi)?

Although both dishes look like rolls made with rice and nori, there are significant differences between them:
- Rice seasoning. For Japanese rolls, rice is seasoned with rice vinegar, sugar, and salt (it has a slightly sour taste). For kimbap, rice is seasoned with sesame oil and salt, which gives it a pronounced nutty aroma.
- Filling. Sushi often contains raw or lightly salted fish, seafood, and cream cheese. Fish is almost never used in kimbap (except for canned tuna). The main filling consists of fried meat, ham, crab sticks, eggs, and plenty of vegetables.

Homemade Classic Kimbap Recipe

Ingredients (for 3–4 rolls):
Main ingredients:
- Nori sheets — 4 pcs.
- Rice (short-grain or special sushi rice) — 2 cups (dry)
- Sesame oil — 1.5–2 tbsp.
- Salt — 0.5 tsp.
For the filling:
- Pickled daikon radish (yellow) — 4 strips
- Carrot (medium) — 1 pc.
- Cucumber (long) — 1 pc.
- Chicken eggs — 2 pcs.
- Ham, sausages, or crab sticks — 150 g
- Spinach (fresh) — 100 g (optional)
- Oil for frying
Step-by-step preparation:

Step 1: Preparing the rice
- Rinse the rice thoroughly several times until the water runs clear.
- Cook the rice until done (it should be soft but not overcooked into mush).
- While the rice is hot, add sesame oil and salt. Gently mix with a silicone spatula and allow it to cool to room temperature.
Step 2: Preparing the filling
- Eggs: Beat the eggs with a pinch of salt. Pour them into a heated frying pan and cook a thin omelet. Cut it into long strips.
- Carrot: Cut the carrot into thin strips and lightly fry it in a pan with a drop of oil for 1–2 minutes (it should remain slightly crunchy).
- Cucumber and radish: Cut the cucumber and pickled radish into long strips of equal thickness.
- Meat / ham: Cut the ham or sausages into long strips and lightly fry them in a pan.
- Spinach (if using): Blanch the spinach in boiling water for 30 seconds, squeeze out the excess moisture, and season with a drop of sesame oil and a pinch of salt.
Step 3: Forming the kimbap
- Place a bamboo mat (makisu) on the table and put a sheet of nori on it with the shiny side facing down.
- Spread an even layer of rice over 3/4 of the nori sheet (leave the upper edge, about 2–3 cm wide, empty).
- Place all the prepared ingredients in strips across the center of the rice: omelet, carrot, cucumber, radish, ham, and spinach.
- Using the mat, begin tightly rolling the roll from the bottom edge upward, pressing the filling with your fingers so that the roll is firm.
- Lightly moisten the edge of the nori without rice with water so that it seals the roll.
Step 4: Slicing and serving
- Brush the surface of the finished rolls with a drop of sesame oil and sprinkle with toasted sesame seeds.
- Using a sharp knife (which can also be lightly coated with sesame oil or moistened with water), cut the roll into slices about 1.5 cm thick.
- Serve the kimbap freshly prepared! It is an excellent standalone dish for lunch, a picnic, or a filling snack during the day.
Tips for Perfect Kimbap
- Do not overload with rice: The rice should be spread in a thin layer so that the flavor of the filling remains the main focus.
- Tight rolling: The main secret of good kimbap is to roll it tightly so that the pieces do not fall apart when sliced.
